About the Farm and Winemaker  Carla Pauw is the creative force behind Saltare, going about her business in the most understated manner imaginable. A definite dreamer, she is soft spoken and well… a classy lady whose personality shines through her wines.
Saltare means “to dance” in Latin and dancing is indeed. her passion. When she is not making wines, she enjoys “walking the dogs in the mountain, yoga, good food and wine with friends, learning French, perfume and dancing of course”.
Dancing, perfume, French sounds to us like the magical ingredients to make the perfect MCC.

What we think(why we picked it)

 

 This MCC outshines many Champagnes at 4 times the price… It was an easy choice to make.
Region and Soils: 

 

The grapes come from Carla’s uncles farm in Robertson, known for it’s lime rich soils and cold nights this hinterland has been proving itself year in and year out as MCC central.
About the harvest Carla tells us “2010 was my 7th harvest for Saltare MCC. We celebrated by starting the harvest with friends helping pick and press the first grapes of the season. It turned out to be a very blessed harvest!”
Cool Wine Only 400 bottles are made each year. This wine is one of only five ever made. In Carla’s worlds: “This was only the second year that we made a Blanc de blancs. The grapes come from a beautiful vineyard in the Breede River Valley that has since made way for a peach orchard, to my sadness! I produced five Blanc de blancs vintages from this vineyard, so this is number two of five.”
